There are training manuals for GC estimators and for some of the trades, but not for the wall & ceiling trades specifically.  I am in the process of providing a remedy.  It distills my 29 years of estimating experience on everything from schools to hospitals to hi-rises into a manual that is readily understandable by anyone who has worked at the level of foreman or above in our trade, with an ability to read blueprints and with high school math.   It is meant to be used in combination with, or as preparation for on-the-job training as a wall & ceiling trade estimator.  Expected publication date is late 2011.  Check here for further announcements.   The working draft introduction and table of contents are shown here.
